Resurrection

Wow it has been more than two years that I have put in my two bits here. So much has happened. My life has transformed thanks to the arrival of the most amazing personality called Arissa Asma Alam, my now thirteen and a half month old baby last year on 26th of March. Then came the change in my job where now I finally managed to make to changeover to HR from marketing. I still wonder why it never occurred to me earlier in my career that this is indeed a viable option I should explore. Well . . . . better late than ever.

While my baby's arrival has filled my life with new joy and wonders it has however drastically reduced the frequency and time I now spend in front of the the stove. However that does not mean that I have totally given up on my cooking passion. I continue to whip up things here and there. Also after a full day at the office coming back home and sitting in front of my laptop is a rarity. Today however is one of those days where Mommy is alone with a sleeping baby. What luxury to have all this time all to myself without feeling guilty about it! So I thought why not get back to this blog and resurrect myself in the blogosphere again!!

Today I am sharing a very simple but yummy recipe for a prawn dish that I had at my cousin's place a few days ago. This particular cousin I did not realize till that day had her fabulous cooking skills neatly hidden away. Well if you are from a foodie family like my one, I guess it is a natural progression that has happened. Narmin did a yummy prawn dish and when she shared the recipe with me I was amazed to know how simple it was. So here it goes . . .

Narmin's Signature Sweet-Spicy Prawns

Prawns (heads removed, and de-veined but not shelled) 500 grams
Tamarind pulp 4 - 6 tablespoon (depending on how thick the pulp is)
Sugar - 4 -6 tablespoons (depending on how sour the tamarind is and the degree of sweetness you want)
Soy Sauce - 1 tablespoon
Fish sauce - 1-2 teaspoons
Salt - 1/2 teaspoon
Red chili (fresh)- finely chopped (as per taste)
Oil - 2-3 tablespoons.

Mix sugar, tamarind, soy sauce, fish sauce, salt and red chili and make the marinade.

Add the prawns and marinate for 10 minutes to half an hour.

Heat oil in a wok, add the prawns with the marinade, cook until all the moisture dries up and the prawns are cooked through.

Serve with rice hot or at room temperature.
